Extra virgin olive oil, cold pressed
2 apples, peeled, cored and chopped
Small piece of fresh ginger, peeled and grated
4 shallots, finely sliced
2 gloves of garlic, peeled and chrushed
1 green chilli, seeded and chopped
¼ tsp ground cardamom
1 tsp garam masala
1 Tbs Sureslim medium curry powder
1 tsp turmeric
1 lemon juiced
2 cups sureslim vegetable stock
100 grams baby spinach leaves
150 grams zucchini chopped
150 grams cauliflower florets
150 grams baby yellow squash, halved
300 grams light Ricotta cheese
1. In a slightly oiled heavy based large saucepan combine apples, ginger, garlic, shallot,
Chilli, cardamom, garam masala, turmeric and curry powder. Saute for 4 minutes.
2. Add lemon juice, stock, spinach, zucchini, cauliflower and squash. Simmer uncovered for 25 minutes.
3. Gently fold through ricotta mixture and serve immediately.
